Ingredients
Pancakes
- 1 banana (very ripe)
- ½ cup pecans
- ½ cup oats
- ½ cup cottage cheese
- 1 egg
- 2 tsp butter (can use coconut oil)
Sauce (optional)
- 1 cup blueberries
- 1 tsp cinnamon
- 1 tsp pecans (chopped, to sprinkle over pancakes if desired)
Instructions
- Place all ingredients in a blender or food processor and blend until smooth.
- Heat butter or coconut oil in a pan over medium heat.
- Pour batter into heated pan to create pancakes.
- Turn heat down to low and cover the pan.
- Cook 3-5. minutes.
- Turn the pancakes over and cook uncovered for another 3-5 minutes so both sides are golden brown.
- For the suace: heat the blueberries in the microwave until soft - about 15 seconds. Stir in cinnamon. Top with chopped nuts if desired.
Notes
Makes 2 servings.
Batter can be stored in the refrigerator in an airtight container for up to 2 days. To reheat, warm in a pan with a bit of butter or place in a toaster until heated.Â
